Simple, fresh and pleasing thanks to garlic, tomatoes and bread again.
Start by slicing up the bread into 1/2 inch slices and toasting them in a toaster until they’re crispy light brown. Try to use a bread with a full texture as opposed to one with many holes or one that is fluffy soft inside.
Next chop up a clove of garlic into thin slices and add it to a bowl.
After that slice your tomatoes into small cube like pieces and add them to the bowl with the garlic.
Then chop up the basil and add that to the bowl as well.
For the toast rub a raw clove of garlic across the top, if your bread is crispy and the texture is fine (without to many big holes) it will shred the garlic onto the surface of the bread.
Now it’s time to add the tomatoe topping on the toasts, make sure to spoon some of the oil from the topping bowl onto each piece.
Season to taste with salt, ground black pepper and a ‘C’ of extra virgin olive oil.
