Spaghetti with melted parmesan, crispy pancetta bacon held together with eggs and butter.
First start by slicing up the Pancetta bacon into small cubes.
Next in a large frying pan melt about 1 table spoon of butter.
When the butter is melted add the Pancetta to the pan with about a table spoon of extra virgin olive oil, making sure to stir everything around while it simmers on a low heat.
Now it’s time to prepare the main mix of eggs, Parmesan cheese and ground black pepper.
Start by adding two whole eggs and only the yolk of the third, lightly beat them together with a fork or electric mixer.
After that add in some ground black pepper and the Parmesan cheese to the eggs, making sure to mix everything together with a fork.
This is a good time to cook the spaghetti which takes about 10 minutes.
Check and stir the pancetta bacon to see if it’s brown and crispy, if it is then turn off the burner.
When the spaghetti is cooked strain it and leave a little of the hot water in the pot, a couple table spoons worth.
Add the spaghetti to the large frying pan with the pancetta bacon, then add in about a table spoon of the hot water and mix it around well.
Now it’s time to add in the egg mix and stir everything together. If your frying pan is still very hot then add the spaghetti and pancetta bacon to the bowl with the egg mix (this avoids cooking the eggs if your frying pan is too hot).
It’s now ready to serve.
