This creamy sauce is a nice break from the traditional tomato based sauces. We make this sauce often when having friends over for dinner, most of them have never had it before.
Cut the bell peppers in half, clean out the seeds inside and rinse them off.
Next slice them into thin strips, the thinner they’re cut the quicker they will cook. When they’re all cut add them to a large frying pan with a couple tablespoons of extra virgin olive oil and a good pinch of salt. Turn the heat on medium and let them simmer with the lid on for about 10 min.
After 10 min lower the heat lower the heat and stir them a bit, put the lid back on and let simmer. This is a good time to put some water on to boil for the penne pasta.
Then after another 10 min when the bell peppers are very soft run them through a food mill. this will remove the skins and mash up the bell peppers into a silky consistency. Make sure to scrape off the bottom of the food mill.
Now it’s time to add in the heavy whipping cream. Mix in small amounts until your sauce is a light orange color.
Next rip up some fresh basil into small pieces and add it to the sauce while it’s simmering on a low heat.
Add your cooked penne pasta to the sauce and mix it around on a low heat for a couple of minutes.
Serve hot with some grated parmesan cheese.
