This recipe is a simple way to get a lot of flavor into a piece of pork.
Start by pre-heating your oven to 360° F, 180° C
For the preparation of the pork make two holes all the way through the pork, the holes should be big enough to stick your finger in. Later the holes will be used for the herb seasoning. I typically use a metal skewer for the holes.
To make the herb seasoning chop up the garlic, fresh rosemary sprigs and salt into a fine consistency.
Now it’s time to stuff the herb seasoning into the pork through the holes previously made. I usually stuff it in both sides getting an even amount all the way through.
When that’s done sprinkle a pinch more of salt on the cutting board and roll the excess herb mix and salt onto the outside of the pork.
To finish preparing take the sprigs of fresh rosemary and tie them around the pork with cooking string.
Next peel, wash and dry the potatoes. It’s important to dry the potatoes well so they cook better. Then chop them up into medium size cubes and add them to a large rectangular cooking pan.
Now it’s time to add the prepared pork to the pan with the potatoes and season everything with fresh rosemary twig-leaves, olive oil, salt and pepper. Don’t be afraid to put in some extra olive oil be generous with the seasoning at this stage because later it will get mixed around while cooking.
Time to put it in the oven and let cook for approximately 20 minutes.
After that take it out and turn the pork and potatoes around. Then put it back into the oven for another 30-40 minutes until the pork is cooked. The bigger the pork piece is the longer it will take to cook. cut a slice and try it if your not sure.
Now take out the pork and put the potatoes back in the oven to brown if they’re not already browned.
Once the potatoes are done add them to the main plate and it’s now ready to serve.
