Roastbeef with herbs slow cooked in olive oil

Slow cook tender beef with herbs and olive oil.

Have a good size piece of tender beef? This is a great way to lightly season it with rosemary, garlic and olive oil. This recipe is great to warm up or eat cold slices the next day or cold slices with warmed up gravy sauce on them.

Ingredients for 6

  • 2 1/2 lb beef, rump or thick sirloin cut. (more about cuts)
  • 4 sprigs of rosemary
  • 2 cloves of garlic
  • 1 cup of decent olive oil
  • 1 beef broth cube
  • salt and pepper for seasoning

Add two cloves of garlic, couple sprigs of fresh rosemary and about a cup of olive oil to a medium sized pot with high sides. the pot should be around the same size as the piece of beef but with higher sides.

Put that on the stove to simmer on a low heat. While that’s simmering trim and clean the beef as you prefer, cutting away some of the excess fat.

After that tie four strings around the beef and fit a couple sprigs of rosemary under them.

Next check your simmering olive oil and garlic to see if the garlic and oil are a light brown color. At this point carefully lower in the beef and raise the flame to a medium heat. notice how it just fits in the pot, this keeps the heat concentrated around the piece of meat.

When 10-15 min have passed rotate the beef 1/4 of the way around the pot, repeat this step a couple more times. Make sure to add a pinch of salt at this stage for seasoning. As the beef is turned it will start to have a dark brown cooked color.

While turning the beef bring a small pot of water to boil and add in a beef broth cube.

Now that the beef has been turned a few time and cooked to a nice deep brown color on the outside add in about a 1/2 cup of broth and lower the flame letting it simmer for another 15 min, this slowly cooks the inside of the beef. If you prefer the beef to be cooked more let it simmer longer than 15min. If your’re not sure you could always cut a piece off to check the inside.

To serve remove the piece of beef from the pan, cut it into thin slices and spoon some of the gravy sauce on top.
